Fresh Pasta with Hot Meat Sauce

ingredients:

  • 1 package (about 450gr) fresh pasta
  • 2 tsps sesame oil
  • 340gr boneless chicken thighs, thawed and cut into 3cm pieces
  • 20gr ginger, thinly sliced
  • 1/2 small onion, cut into 3 cm pieces
  • 1 tbsp cooking oil
  • 2 tsps corn flour dissolved in 4 tsps water

sauce:

  • 1/2 cup tomato and basil or pasta sauce of your choice
  • 1/2 cup soup stock
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 2 tsps chilli powder
  • 1/2 tsp mixed spice powder

method:

cook pasta according to package directions; rinse and drain. add sesame oil and toss to coat. arrange on a serving platter and set aside. mince chicken in food processor (30secs); set aside. chop garlic, ginger, and onion in chopper/shaker (3secs). remove and set aside. set frying pan on high. add cooking oil and heat until hot. add garlic mixture and stir-fry until crumbly. add sauce ingredients and bring to a boil. add corn flour solution and cook, stirring, until sauce boils and thickens. pour sauce over pasta and serve.
